To me, watermelon is the epitome of summer. It makes me think of family holidays in Turkey when we used to bite into a slice on the beach as kids, refreshing and fueling up some energy to play around until sunset. On this particularly dreary day I wanted to taste summer and made this salad I was planning to make ages ago ever since I saw it on Luxirare. I slightly changed it up depending on what I had on hand but sticked to the main ingredients.
As I didn't have a mango I substituted it with saturn peaches and added the mango flavor with a delicious vinegar (below). Then some arugula, sliced red onions topped off with creamy goat cheese.
The sliced watermelon is cooled in the freezer for at least 15 minutes then dressed with olive oil and balsamic vinegar. I also added fleur de sel to taste.
I discovered last year that I love the sweet, salty and sour flavours (have a look at my previous recipes) this salad offers and think it's a perfect idea for lunch or a light dinner during summertime.
